what are the differences in cookie sheets-light vs dark, flat vs jelly roll pan,?

insulated vs non insulated, etc.

Light is much more recommended as it is thought the dark will retain more heat. I really don’t care anymore as I use parchment paper for every single batch, it is wonderful–you’ll never burn another cookie. I would recommend the insulated, again so the pan doesn’t soak in and retain heat. Another trick is to not bake any cookie at a temp higher the 325, no matter what the recipe says (Mrs. Fields swears by that, I tried it, it works!) Also have at least four sheets, 2 in the oven baking and 2 out being loaded, so you are always loading cool cookie sheets, you never want to put raw cookies on a hot cookie sheet. I also rotate my pans mid way through cooking, 180 around and switch top with bottom.

You certainly don’t have to spend big bucks to get good cookies sheets, you can get good basic ones at WalMart that come 2 in a pack for about 10 and probably cheaper this time of the year.
